ESC: Singapore Noodles with Gulf Shrimp and Roasted Pork, pg. 102
These noodles are a mystery to me. Although they are called this across the globe, they apparently have nothing to do with Singapore. They’re also a common item on Chinese restaurant menus? One of my followers from Singapore also confirmed, “yup, no idea either…”
Tips & Tricks: This one takes some prep work. Make sure you marinade the pork the day before!
Easy Substitutes: If you can't find annatto seeds use a 2 Tbsp oil to 1 Tbsp paprika ratio.

Make Again?: Probably not to the recipe exactly, but I would absolutely recreate these flavors.
