ESC: Ginger-Chile Oil Dumplings, pg. 94
Once you’ve made a big batch of the ESC meat stock, reserve a little bit to bang out these bad guys.
Tips & Tricks: Pinch all the air out when forming the dumplings, you don’t want them to burst in the water!
Easy Substitutes: Good quality store bought meat stock. The watercress at my grocery store didn't look too good so I skipped that. I also subbed fried garlic instead of fried shallots. Potato potahhhhto.
Pair With: The ESC chile oil, no brainer. And a really cold beer.
