ESC: Mushroom and Spicy Tofu Bún, pg. 70
This is the closest thing to a salad I'll eat in the wintertime. Leaves can just go away, honestly. My favorite thing to enjoy with bún is a heaping pile of egg rolls. Specifically mama Som's egg rolls. She makes them in batches and we usually have a stash in the freezer. I was really missing them when we made this! I also forgot the mushrooms.. ya win some ya lose some. The good news is it's still delicious.
Tips & Tricks: Prep a big plate/container of the toppings ahead of time so you can whip this dish up quickly and easily.
