I haven't cooked anything from the book in a few weeks and I really needed to find some motivation again. A bunch of my girlfriends came over for dinner so I knew I wanted to share some of the ESC recipes. I made two of the steamed buns, the green jungle curry noodles and the spicy vegetarian pho (for the non-pork peeps). As I had two different broths and two different noodles warming on the stove, I tried to explain what goes with what and how to garnish each soup but after a Dà Nang margarita (pic soon!) and a couple glasses of wine we really didn't care. It was a delicious noodle free-for-all. We even threw on some of the extra toppings from the steamed buns. This picture makes me laugh because of all the crazy combinations we slurped down but also it reminds me that its OK to take a break sometimes when you're really not feelin' it. Back to work!

Difficulty: Medium, if you opt to use the fresh noodle recipe in the book. I decided to get some store bought since I was entertaining and wanted to keep it simple.
Tips & Tricks: One soup at a time if you *truly* want to enjoy this recipe as is.
Easy Substitutes: Maybe this should say "fuck it, throw it all in" instead.
Pair With: Friends.
Make Again?: Most likely. About to go crush the leftovers, though!
