Strawberry Rhubarb Gin and Jam

We made it, friends. It's rhubarb season. I spent all winter waiting for it to arrive but when the cravings were too strong to ignore I whipped up this quick n dirty cocktail. I was, yet again, not one of those perfect humans who had a frozen stash. I usually always however have a jar of strawberry rhubarb jam kicking around. While you're busy making rhubarb pies, galettes, ice creams and other treats, tuck this recipe away for the end of the season when you're canning and jamming like crazy, trying to hoard as much rhubarb as you possibly can.

Strawberry Rhubarb Gin and Jam

Yield: 1 Cocktail

Ingredients
2 Ounces gin
1 Ounce fresh squeezed lemon juice
1 TBSP Strawberry rhubarb jam, plus more for garnish
1 TSP Lightly crushed pink peppercorns
Club soda


1) Combine the gin, lemon juice, jam and half of the pink peppercorns in a cocktail shaker, shake well.
2) Strain into a DOF glass or similar, over ice.
3) Top with club soda and remaining pink peppercorns. Add another small dollop of jam as optional garnish.
