ESC: pg. 108 Grilled Rib-Eye Fried Rice
Fried rice is the perfect Monday night quick and dirty dinner. Start with rice, (leftover preferably) pick a protein, grab your saddest vegetables, maybe an egg or two, a fish sauce/siracha/rice vinegar slurry and boom. Heaven. But let me remind you about our friend fish sauce caramel- back to play. ESC recommends drizzling a generous amount over your charred rib-eye for maximum heavenliness. I seriously can't stop with this stuff- I'm putting it on everything!
Tips & Tricks: If your rice is dry you can add a little water, but not too much! You still want to get all those crunchy bits.
Easy Substitutes: Just about everything here can be subbed for something else, even the rice. You could totally sub that for quinoa or another grain.
