Okay. It was 95 degrees today and VERY humid. But for some reason I'm still craving soup.... I reach for a bowl of steamy pho so often in the wintertime but really??? NOW? In the middle of summer? When will it stop.. As much as I wanted to, I didn't give in to the cravings and just admired this photo from a previous feast instead. Bún bo hue is a Vietnamese noodle soup with a deliciously vibrant broth. ESC's version packs in all the umami by adding tomato to the base. Now I'll go make something for dinner that doesn't involve turning on the stove.
Tips & Tricks: This dish calls for specific noodles. Look for the ones that are made for bún bo hue.
Easy Substitutes: This could easily be made vegetarian with a veggie based stock and tofu instead of meat.
Pair With: Crusty bread and lots of lime.
Make Again?: I'm going to try my hardest to wait for colder weather..
